Starter, time, grain, fire.

Traditional European sourdough craft: natural leaven, long fermentation, hand shaping, and slow stone-milled whole grain.

Richard’s story

European sourdough, brought to the Berkshires.

Richard Bourdon learned the craft in Europe, then spent months matching it to American wheat. Wild yeast. Stone-milled grain. Hand-shaped loaves. He moved the bakery into the old mill in Housatonic in 1986. The work has not changed.
